About

Originally born and raised in San Diego, California, Brittany grew up with an obsession for the holidays and special occasions. The first thing she remembers baking were sugar cookies with her mom for Halloween and Christmas, a recipe she still uses today for her decorative sugar cookies and wedding favours. She spent summers in Seattle, Washington where she learned the art of ‘baking with love’ from her Grandma who always had a freezer of delicious baked goods stored up for these special visits. Picking fresh zucchini and blackberries from her Grandpa’s garden, they would spend the afternoons baking homemade loaves, pies and crumbles. Baking brings back these childhood memories and creates a nostalgia that she likes to bring into everyone’s home that now has a White Rabbit Cakes homemade treat. 

After attending Lehigh University in Pennsylvania, she went on to earn her diploma in Baking and Pastry at the Art Institute of San Diego. Moving to New Zealand in 2014, she continued her art in the industry, working for Cup and Cake Queenstown, Double Black Café, and Aspiring Catering. In 2018, she opened White Rabbit Cakes, a specialty dessert and cake company in Lake Hawea. She continues to upskill herself, studying under some of the top Cake Artists in the world such as Jasmine Rae, Zoe Clark and Tanaporn “Kwun” Vilailaks from Butter Blossoms in Thailand. Growing and perfecting her trade is always a high priority for her. 

White Rabbit Cakes has now grown into larger premises in Albert Town at the old Double Black Cafe location and everything has come full circle. She plans to continue to grow and extend her offerings to the community and one day in the future, customers will be able to come and purchase delicious and fresh baked goods while enjoying a coffee outside the Albert Town kitchen.
